Hello Beetroot, Goats Cheese and Naval Orange Salad! – no meat recipe

Hello Beetroot, Goats Cheese and Naval Orange Salad! – no meat recipe

I absolutely adore creating happy plates of pretty-ful beautiful salads.

Confession time.  Until now, I had only ever eaten beetroot from a tin.  When I saw these beautiful little beets at the market, I thought to myself, OK be brave let’s try something new.

So I took those little beets home…

A tip for those trying to cook beets for the first time – watch the little beets don’t spray juice on your clothes as it is a pain to get out.  My white apron now has cute little beetroot kisses all over it…

To make this salad, you will need:-

  • Roasted beetroot (I par-boiled them before putting them in the oven for 15 minutes at 180°C
  • Goats cheese
  • Naval orange
  • Rocket and spinach leaves
  • Cucumber
  • Boiled egg
  • Salt and pepper

  1. Arrange the above pretty ingredients on a plate!

Et Voila beetroot, goats cheese and naval orange salad!

Until next time – stay happy and healthy!

These 3 fellas were a bit nervous for their photo shoot but I just told them to relax, fixed their hair and tickled them up a bit…and then they got into the swing of things

Goats cheese and roasted beetroot. A match made in salad heaven!

I added naval orange because I usually like my salads without dressing. The orange added a bit of a juicy kick!
